I awoke this morning and the VDAY IPA was happily and steadily bubbling away. The Wyeast 1056 American Ale Yeast creates a thin white Krausen across the top of the wort with minimal hop sludge. I think this is going to turn out a nice lite brown or possibly even straw in color. I’m hoping for a citrus bitter front end that is smoothed over by a the Maris Otter and honey combo. The Wyeast 1056 American Ale should bring a clean beer with a bright flavor.
