This morning the airlock had only a little bit of air elevating the top potion off the stem. At first glance I didn’t see much activity in the beer, and there were only small disappearing islands of foam left floating on top. I am planning to bottle on Monday evening. I’d like to give it a full day to settle and possibly clear up a bit more maybe Tuesday not totally sure yet. Been debating a second fermentation, but being this is my first batch I’m not sure I can wait that long to try this hopefully sweet smelling hoppy nectar.
The beer is getting clearer and is getting a good deep alcohol like smell. The airlock is maintaining a bubble every few minutes and the krausen islands are still floating around but are getting smaller. Sadly most of the wood chips are stuck to the side of the carboy from the first krausen up-roar. I was thinking of trying to knock them off the side with a sanitized spoon but being this is my first go at it, i want to limit the possibility of contamination. So they will remain stuck on the side until cleaning day.
